Warm Apple/Almond Soup - Perfect for Winters |
Apples have always been one of my most favorite fruit. Whereas a fresh bite is the best way to start your day, apples can be enjoyed in form of apple muffins in the morning, apple sauce in the afternoon and apple yogurt in the evening. A basket full of apples is sitting quietly on my kitchen island for past one week and I have been pestering my son to eat the apples and trying to get across the good things about the fibre and flavanoids (antioxidants) content in apples.

At the end of the day in order to make sure, he gets his bowl of fruits, I added mixed fruits in the soup. I have experimented with the citrus and juicy fruits like grapes, pineapple and orange too (different recipe). The soup is delightfully delicious and nutritive.

A hot soup bowl of fresh fruits and veggies becomes therapeutic in chilly winters. For a change, adding a handful of fruits to the stew of veggies does the trick, when you dont feel like eating cut fruits. A warm welcome to bowl of warmed up fruits....
Ingredients:
Apples: 2
Gooseberry/Amla
Tomatoes: 2
Carrots : 1/2 cup
Almonds: 8
Sugar : 1 tsp
Salt : 1tsp or to taste
Water: 3 cups
Cream : 1/4 cup
Cinnamon: dash
Method:
Wash and rinse the apples thoroughly. Cut the apples with thier skin (to get the most of fibre and nutrients), amla, tomatoes and carrots roughly into chunks (can also add more veggies). Soak almonds in warm water and peel off the skin.

In a deep bottomed pan or pressure cooker, boil 3 cups of water.
Add chopped fruits, veggies, almonds, Let it simmer or pressure cook till 4 whistles.
Puree the boiled veggies/fruits in a mixer until smooth.I personally prefer not to sieve the soup to retain the goodness of fibre in veggies.
Season with salt and sugar/ honey to taste.
To make the soup creamier, add cream to the soup and simmer for another 5 minutes.
Garnish the soup with fresh dill weed, Fresh Mint or parsley.
